Charcuterie

A gallery of charcuterie planks can be found here. Primarily to be used as a ‘serving board’. The harder woods like Cherry, Maple, Mulberry and Oak can be used as cutting boards.

An initial sealer of shellac (made from resin secreted by the female lac bug on trees in India and Thailand) is applied and sanded in five steps to progressively finer sanding paper.

These boards are finished by hand sanding and coated with my own mixture of food grade mineral oil and organic beeswax. Knots and cracks are filled with West System epoxy fully cured for food safety.

Charcuterie loosely translated is ‘pork butcher shop’ and while pork can be the main attraction (think pancetta, prosciutto, mortadella and coppa) much more can be added to the serving board. The following link will take you to some beautifully crafted platters. Everything from cheeses, fruits, olives and even wines certainly are welcome to be included in your charcuterie creation. Cheers!!!
